Middleware is not the only manner in which to change dataset properties. What if you run the command zfs set aclmode=passthrough dozer/AO/SO
?

Applying 20.10.1.1 results in the same as with 23.10.1 where the apps service no longer starts when a bridge is set.
Using the NIC directly doesn't encounter the same problem and re-creating the bridge setup didn't change anything (rebooting in-between or not).
