we recommend replacing the Realtek NIC (which are known to be unreliable under load) with an Intel NIC. Your logs show that this NIC is flapping up/down, which is resulting in the unresponsiveness. The FreeNAS forums have recommendations for affordable Intel NICs that are known to work well.
Also, Emby seems to be unhappy with the permissions of your mounted storage (which is filling up your logs and possibly adding to the load).

So, I have went through the steps of setting up Plex, jails, etc., but after some time the plex management page is unreachable. I have ensured global config is filled in, static IP's, allowed needed ports, I have even rolled back to 11.2U5 and completely rebuilt plex. Please Help...
