I have the same issue in 22.12.2 as well. For example my plex app is setup to use “Athens” timezone, but the logs show incorrect time:

When you set your timezone in System Settings > General > Localization, it does not apply to pods, or some other things like network adapters on the dashboard. Instead you have to run the following commands in the shell to update the pods:
stop ntp service
sudo systemctl stop ntp
Synchronize the system clock with NTP servers
sudo ntpd -gq
Start the NTP service
sudo systemctl start ntp
I think this should be done automatically when you set your timezone in the gui.
