the only way to fix this was to manually import with shift=true like -
incus config device add sabnzbd bd_sab disk source=/mnt/AppyHoe/apps/Sab path=/BD-SAB shift=true

Really weird situation, when mounting drives there seems to be an issue specifically if you are trying to go more then 1 level down if the folder was create in the ui.
for instance,
/nvme-sab-full
├── complete - created in UI
├── incomplete - created in UI
├── Movie - created in UI
└── Tv - created in UI
if you created a mount for /nvme-sab-full and tried to access complete i cannot see anything. If i mount /nvme-sab-full/complete i would be able to see the folders content. However, if you access /nvme-sab-full and went to Tv there was no issues seeing the folders content. All folders had the same permissions, as i tested in mutiple folders and drives that my jailmaker and other apps have no issues getting into.,
